Joojeh Kabab

Cultural fact:

Joojeh Kabab is one of Iran’s most popular chicken dishes. The word “joojeh” means young chicken in Persian. It is especially popular at family gatherings, picnics, and Sizdah Bedar, the final day of the Nowruz celebrations. The golden saffron marinade gives the chicken its distinctive Persian flavor and color.

Recipe:

  1. Prepare the saffron: Crush the saffron and mix it with hot water. Let it sit for about 10 minutes.
  2. Make the marinade: Mix yogurt, saffron, onion, lemon juice, olive oil, salt, and pepper.
  3. Marinate the chicken: Add the chicken and coat it well. Cover and refrigerate for at least 4–6 hours.
  4. Skewer: Place the chicken pieces onto skewers.
  5. Grill: Grill over medium-high heat, turning regularly, until the chicken is fully cooked and lightly charred.
  6. Serve: Enjoy the Joojeh Kabab with saffron rice, grilled tomatoes, and peppers.

✨ Persian touch: The combination of saffron, yogurt, and lemon creates the signature golden color and tender, tangy flavor of Joojeh Kabab.
