Sabzi Polo ba Mahi
Cultural fact:
Sabzi Polo ba Mahi means
“herb rice with fish”
and is one of the most traditional foods served
for Nowruz, the Persian New Year.
The fresh green herbs represent
spring, renewal, and new beginnings,
while the fish is associated with
life and movement. It is often
enjoyed with family as people welcome the new year
together.
Recipe:
- Prepare the rice: Rinse and soak the rice, then parboil it until the grains are partly cooked. Drain.
- Add the herbs: Gently mix the chopped dill, parsley, cilantro, and chives with the rice.
- Steam: Layer the rice and herbs in a pot, add some butter or oil, cover, and steam on low heat until fluffy. A crispy tahdig will form at the bottom.
- Prepare the fish: Season the fish with turmeric, salt, pepper, and lemon juice.
- Cook the fish: Pan-fry the fish until golden on the outside and fully cooked inside.
- Serve: Place the fragrant green rice on a platter and serve the fish alongside it. Add saffron rice and lemon wedges for a classic Persian touch.
✨ Fun fact: The green rice makes this dish look like spring on a plate!
